Ale’s Keto Instant Pot Pulled Pork

The sauce that is simmered down to a syrup-like consistency is delicious! Although there are good keto BBQ sauce options out there, I did not want to discard the precious gold left in the pot after cooking the meat. If you want to add store-bought sauce, have some handy just in case you want saucier meat. Serve with some buttered and toasted keto buns, onion and pickles.

 5-7 lbs pork shoulder butt, cut in 2 inch cubes
 seasoning/rub of choice
 1 onion, sliced
 1 cup water
 ½ cup apple cider vinegar
 1 tbsp keto brown sugar
 ½ tbsp liquid smoke
 1 tbsp soy sauce
 1 tbsp minced garlic or 1 tsp garlic powder

Season the pork cubes and then sear on all sides. Place in the Instant Pot as they're ready. I used the Chupacabra rub.

Slice a whole onion and sautee until golden. Place in the Instant Pot.

Mix the brown sugar with the water to dissolve. Add all ingredients to the pot.

Set your pressure cooker on High for 60 minutes. Natural release for 15 minutes, and then quick release.

Remove the meat to shred. Leave the Instant Pot on on sautee mode and cook the sauce down until it's a syrup consistency (anywhere from 30 min - 1 hour).

Add the meat back and mix well.
